Starting his professional career during the Sydney Olympics and being faced with serving up to 500 international guests per day was a defining moment for Chef Mate Herceg. At the age of 30, he was appointed Head Chef at the Hydro Majestic Hotel at Medlow Bath, a challenge he took in his stride. Mate was in charge of managing 4 kitchens, 3 restaurant 30 staff and producing over 1000 High Teas, 1500 lunches, and 500 dinners every week.
For 19 years Mate has been cooking and has always had a passion for food and sustainability. His passion for cooking came from his mother. His earliest memories are of being sat beside the kitchen sink in the family house and watching his mother prepare and cook. Mate learnt all of his early skills and passion for cooking from her. When he wasn’t in the kitchen, he was outside with his father in the garden turning over soil and growing fruit and vegetables. Using fresh produce from the garden was instilled in him from a young age.
Through his skills and passion for food and fresh produce, Mate decided to start a full-circle urban farm. The farm produces the highest grade mushrooms free from chemicals and re-purposes a spent product which reduces waste and minimises impact to the earth.

We are an Urban Mushroom Farm located in the Blue Mountains @ 912 metres above sea level at Wentworth Falls. We grow mushrooms from spent coffee grounds, spray free and no chemicals. Mushrooms that we produce are Pearl oyster, Elm oyster, King oyster and Pink oyster. We also grow medicinal mushrooms like Reishi and many others in the near future.
